It's nearing the end of the month and I started realizing I really have an over abundance of fresh large carrots left from my beginning of the month shopping trip and I really did not want them to go to waste....
Even though I have been serving them daily with lunch and dinner they were still not used up. So I started searching for a cookie recipe that incorporated carrots - Lots of carrots! This is what I came up with. They are super light, almost cake-like with a hint of orange. delish.
After I started baking them I realized the recipe makes 4 dozen! Goodness gracious! Glad we have room in the freezer ;)
